The challenge in making this sauce was to show the beauty and sweetness of the tiger, rather than the, y'know, Siegfried & Roy side. So we tamed the beast, adding golden beets, carrots, and dates to accentuate the pepper's sweetness, making the dangerous heat more of a through line that conducts the orchestra of flavors than a solo
