Old Vine Chenin Blanc 2023 Grolleau The low-rye/high-malt mash bill makesThis chenin blanc was hand harvested in passes, to obtain both natural acidity (early picking) and riper flavors (later picking). After a short overnight settling, the juice was transferred to stainless steel tanks for fermentation with wild yeasts, then aged on the lees for 5 months.
